Merry Christmas to You From Me: Caramel Chex Recipe!

Wishing you and yours a Very Merry Christmas!

My gift to you is the recipe for my most requested treat, Caramel Chex! I only make it one time a year for a very specific reason: It’s ridiculously addicting. Consider yourself warned. 

Step 1: Preheat oven to 325*. In a saucepan, heat sugar, Karo Syrup and butter over medium heat until butter is melted and sugar is dissolved. On a prepared (large) baking sheet spread out cereal, nuts and coconut.

*I have found 350 temp is perfect in an electric oven, but 325 works best in a gas oven.

Step 2: Pour caramel mixture over cereal mix. Coat cereal mixture well. Try not to drool.

Step 3: Stir well, place in oven for 24 minutes, stirring every eight minutes to assure every cereal bit gets equally coated.

Step 4: After the 24 minute baking time spread mixture out on lightly greased parchment paper making sure to create an even layer. Feel free to leave some small clumps for extra gooey pieces after it cools.

Step 5: Try to keep your significant other out of it.  It’s dangerously good.

Step 6: Store as desired. I typically place mine in either snack size bags, decorated with cute ribbon, or in zip lock bags for ease of access.  I always add M&M’s when bagging up. Note: as the Chex settles it will stick together, creating clumps, so keeping it stored in baggies allows you to gently massage the chex mix to break it up.

Better For You ~ Gingerbread Granola

Good morning!  Hope you all have enjoyed a good weekend.  I am on my way out the door for the Ugly Sweater 5K run with a group of gals.  It’s going to be COLD!!

I wanted to share with you first a Gingerbread Granola recipe I put together last week.  I have always steered clear of granola due its usual high sugar, butter and oil content.   This recipe I created contains NO butter or oil and incorporates nutrient dense ingredients.

I was pleasantly surprised that my first batch turned out really good.  I packaged it up into mason jars and handed them out to some of my coworkers for a fun holiday gift.

Better For You Greek Dip

I am completely in love with this healthy dip.  The Greek yogurt packs in protein, the calamata olives provide Vitamin E and healthy fats and the veggies and hummus offer a healthy punch of vitamins, minerals and fiber. 

Can’t go wrong, folks. 

This recipe was inspired by Iowa Girl Eats.

Ingredients

  • Greek Yogurt
  • Sun Dried Tomato Hummus
  • Calamata Olives
  • Reduced Fat Tomato Basil Feta Cheese
  • Tomato
  • Red Onion
  • Fresh Basil

Spread a hearty portion of yogurt on a serving plate.  Top with a layer of hummus and then finish it off with chopped olives, tomatoes, onions, feta cheese and basil.

Serve with cucumbers, crackers or chips.

Better For You Stuffed Peppers

Ingredients

  • 4 Bell Peppers
  • 1 lb. 93% Lean Hamburger
  • Button Mushrooms
  • 1/2 red onion
  • 4 garlic cloves, minced
  • 1 can Black Beans
  • 1 can corn
  • Reduced Fat Sun-dried Tomato Feta Crumbles
  • 24 oz. Roasted Garlic and Herb Spaghetti Sauce
  • Reduced Fat Provolone Slices

Slice peppers in half, clean out seeds and boil until peppers have softened.

Meanwhile, saute onions and garlic for a few minutes, add hamburger and cook until nearly browned.  Add mushrooms and continue cooking until hamburger is no longer pink and mushrooms have softened.

In a large pot combine black beans, corn and spaghetti sauce.  Place pot over medium-low heat.

Combine hamburger mixture and feta cheese into bean, corn and red sauce.

Fill each pepper (heartily) and finish by adding a provolone slice on top of each pepper.  Place in 350 degree oven for 15-20 minutes or until mixture is bubbly and cheese is golden.

Let sit for a few minutes, and then dig in!

Sometimes I add in cooked quinoa or rice into the mixture to add another layer of texture. 

 

Stuffed Peppers are versatile.  You can add in so many different ingredients to make it your own.
