A New Twist on Taco Tuesday!

Quinoa (keen-wah) is one food I’ve been trying to incorporate into our recipes for the last year.   I love the nutty flavor and rich nutrients in this super-food.

My Top 5 Reasons for Being Team Quinoa

1. High in protein — it has more protein compared to rice or wheat.
2. A good source of riboflavin — riboflavin helps reduce the frequency attacks in migraine sufferers by improving the energy metabolism within the brain and muscle cells.
3. It only has 172 calories per ¼ cup dry quinoa.
4. Since it is not related to wheat or grain, it’s gluten-free. Millions are discovering they feel better and lose weight when they reduce gluten grains or at least wheat products.
5. It is a complex carbohydrate with low glycemic index. This is again good for weight management.

The ingredient list looks daunting, but don’t let that deter you.  There are a lot of spices and the rest of the ingredients are simple.

Halloween I Love You’s, Thrifting, Friends and Funds.

Halloween is synonymous with winter in the Midwest.    It never fails, the temperature plummets and parents scramble to find their kids winter gloves and hats for an evening of trick or treating.  Every. Single. Year.

Clint and I had our bowl of candy ready for a stream of kiddos, but sadly I only saw about 20 total.   That might even be pushing it.   I guess the weather held them back.

Our neighbor’s granddaughter stole my heart in her monkey costume and cute as a button smile.

My friend, Claire, stopped over with her kiddo Briton, so we took off around my neighborhood for a little trick-or-treating.   This kid loves the color green and dinosaurs so his costume was perfect.

Briton is such an intelligent, loving, cute as can be kiddo.  I just love spending time with this green loving squirt.

Briton kept us thoroughly entertained as he told each and every person who gave him candy that he loved them.   It was pretty much adorable and the reactions were priceless.  Most men didn’t know how to respond, one man said “Too Soon” and most of the ladies turned into a ball of mush.

Saturday morning I spent with Tyree hitting up thrift stores for some old frames and a little lunch date at Jason’s Deli.   It has been well over a month since I’ve seen the girl, so it was nice to hang out just the two of us for a low key afternoon.   She and I split ways around 3 and I spent the rest of my day at Nebraska Furniture Mart, Target, Michael’s and Hobby Lobby.   By the time I got home it was 8pm and I was spent.  Dinner and a glass of wine while sitting my butt on the couch is how I spent the rest of my evening as Clint was in Clarinda helping the family harvest.

Sunday morning I had a coffee date with my girl, Sunni.  Instead of meeting at Starbucks, I took the coffee to her.    Little Ms. Brooklyn was not going to let mom go.   Such a cute little squirt.

Following our coffee and small talk, I headed back home for an afternoon of projects.

First up:  a short Harley ride and a long overdue washing.    She was disgusting.

The rest of the day was spent around the house cleaning and starting new projects.  Not done yet, but the exciting part is I have a new entertainment center thanks to my shopping adventures.  The one I had was a cheap buy from Wal-Mart 8 years ago.  It was time to be a grown-up.

New paint and fun wall art to come soon!  I’m tapping into my creative side for this one.

Have I mentioned we aren’t done with the basement remodel yet?   My excuse: we need new furniture, an area rug and a new tv for it.    Oh, and the framing around the window has yet to be finished.   So…. until all of the above can be purchased (money tree… I need a money tree), the basement remains ‘under construction’.

Chicago

A conference took me to Chicago for a few days last week.  A whole 48 hours, to be exact.  I’ve been traveling a lot for work lately – mostly local – but this trip was actually a nice change of pace.

You know what wasn’t cool?   Still feeling a wee bit “under-the-weather” when my flight took off.

That Vodka.   She’s a sneaky little bastard.

Like 90% of the human population on a flight, I fully intended to put my ear-buds in the moment I sat down. Thanks to Southwest allowing you to choose your own seat (which by the way is awkward when you are one of the last to board) I scoped out the least intimidating person to sit next to and picked a guy who looked to be my father’s age who didn’t avoid eye contact.

Gary, was his name, and we ended up chatting the entire hour and 20 minute flight to Chicago.  Gary was on his way back to New Orleans where he is currently working for the railroad.   He’s from Nebraska and had just flown home two days prior to surprise his wife on her birthday.  How cute!   We chatted about our dogs, love of Harley-Davidson, his three kids, his grand-kids, Jeep’s, Range Rover’s, farm life, living on an acreage, etc.    He showed me a photo of the acreage he and his wife currently live on, which is absolutely stunning.   They happened to stumble into it as it was originally a foreclosure, but two years and $90,000 later, they landed themselves a $400,000 home and acreage.   I told him I was incredibly jealous.   He followed up with the offer to sell it to me and I reminded him of the little fact that I know what he paid for it.    ha.

It was such a nice flight!   We shook hands, wished each other luck and vowed to keep an eye out for each other in Sturgis next year.  🙂

So, here it was 4pm on a Sunday afternoon in the city of Chicago.   And I was starving.   After a check-in at the hotel and a walk around down town, I ended up at Rockit Bar and Grill on Hubbard Street.

This place had an easy going vibe, cool interior and down right delicious food.   I ordered a pretzel appetizer that was out of this world and for my main course the buffalo calamari salad that was equally as delicious.    Two beers, a full belly and I found myself walking back to my hotel.   Halloween Party aftermath.  Just can’t hang.

Monday morning had me up and going for the start of the conference.  Yogurt, granola and a Diet Pepsi to start my day.  Figured this was far better then the donuts and rolls that typically accompany conference breakfasts.

After a morning of sessions and a working lunch, I took off mid-day for the short mile walk to Millennium Park.

I headed back to the conference to close out the day with a few sessions before heading back to the hotel to freshen up before hitting the night scene.

Two of us took off on foot downtown to check out the scene (definitely can’t miss Trump Tower) before landing at a Burger Bar for some drinks, a burger (go figure) and crappy service.   We ended the night at Howl At The Moon Piano Bar with several other conference goers.   This place was a total blast – and on a Monday night even!   A Monday!

Tuesday morning started WAY too early with a breakfast that I should have been appreciate of, but wasn’t.   It was a Hyatt Hotel, snobby plated breakfast. I just wanted a Diet Pepsi and a banana.  Is that too much to ask for?

Several sessions and a lot of sitting later, I decided on some ME time and went for a walk down Magnificent Mile for some sun, exercise and shopping.   It was glorious.

I even stopped at Garrett’s Popcorn, thanks to about 10 peoples FB suggestions. 🙂

Too soon I found myself heading back to the airport for my returning flight home.

Happy Halloween from Us!

 

Last Saturday, Clint and I attended a Halloween Party hosted by a couple of friends.   Since neither of us had dressed up for the Holiday in over 7 years, we decided to go all out and have our faces professionally painted by Omaha Masquerade.   So glad we did!  She did a great job of transforming our faces, I’d say!

My favorite part of the night definitely was walking into Target trying to find black lipstick AFTER my face was painted.  I got a lot of double takes, laughs, a few hi-fives and some kids who yelled “MOM LOOK AT THAT”.   hahaha.
