Andes Mint and Chocolate Chip Cookies

Using the same cookie dough foundation previously published here, I made a few edits to accommodate an inviting wintery flavor.

prep time: 15 MINUTES

cook time: 6-8 MINUTES

  • 3 1/2 cups all-purpose flour
  • 1 teaspoon sea salt
  • 2 teaspoon baking soda
  • 1 cup salted butter, at room temperature
  • 1 cup packed brown sugar
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon mint extract
  • Chopped Andes Mints
  • Milk Chocolate Chips

  1. Preheat the oven to 350 degrees F.
  2. In medium bowl, whisk the flour, salt, and baking soda together. Set aside.
  3. Cream the butter and sugars together until creamy and smooth. Add in the eggs and extracts.
  4. Slowly mix in the flour, until combined. Stir in desired amount of Andes Mints and Chocolate Chips
  5. Use cookie dough scoop to form small ball, place on baking sheet and bake for 6-8 minutes (I cook for 7 minutes for a doughy effect). Remove from the oven and let cool on cookie sheet if you want it to continue cooking a little longer, or immediately transfer to foil lined counter-top.  I don’t cool these bad boys on a wire rack as I want the maximum doughy gooey effect.

Brownie Bites with Mint Buttercream Frosting

In honor of St. Patrick’s Day, I made a couple batches of these little beauties to take into work tomorrow.   I cheated and used a boxed brownie mix, but the frosting was all made from scratch, so hopefully I redeemed myself.

Step 1:  Make your brownie batter whether using a box, or from scratch.   Using a mini ice cream scoop, fill mini muffin tins about 1/2-3/4 of the way full.

Step 2: Bake at 350 degrees for 10-12 minutes.  Do NOT over-bake.  Crunchy brownie bites aren’t that appealing.  Remove from pan and with your thumb create a small indentation to fill with frosting later.

Step 3:  Make the frosting.  Hands down the best part if you ask me!   🙂  I have this handy tool from Pampered Chef to assist in the frosting business.  Helps me look like I know what I’m doing!  Fancy!

Step 4:  Start filling those babies up!

Step 5:  Sprinkle with a few Andes Mints and you’re good to go!   Bite sized, minty fun.  Just don’t eat too many.  Defeats the purpose of portion control.
