Weekend in Review

Time for the weekend in review!

Friday evening:

Dinner and a motorcycle ride with the hubs.

I am SO happy it is finally warm enough for two wheels.   Comfortably, that is.  🙂

My favorite summer activity is cruising back roads and exploring small towns.  You can easily find some of the best bars nestled away there.   Friday night took is through Springfield, NE where we swung into Garvey’s Pub.   Fun place and the bartender was very welcoming.  They had a killer back patio which would be perfect for some summer rides with friends!

Saturday morning started off with an early morning jog around the neighborhood.   Was able to see a gorgeous sunrise.

The afternoon was spent in my hometown of Clarinda where I was co-hosting a baby shower for my friend Erin.

After the baby shower, Kayla and I found ourselves at the Ice House for dinner, a few cocktails and some great girl talk before heading back to her house to meet up with the boys.  A few hours of garage time and I was back on the road for Omaha!

Sadly, today has been nothing but storms and temps barely over 30 degrees.

Clint was still in Clarinda on the motorcycle so his 90 minute ride home turned into 3 hours.   He sent me this photo while taking a little pit stop in a random barn to get away from hail and massive winds.

After he finally got home, he ended up on the couch with layers of clothing and a gigantic lap dog.

I spent the day picking up the house and meal prepping.  I have my daily meals packed and ready for the next four days!

I am on a new nutrition plan after seeing a Sports Nutritionist a few weeks ago.  I’ll have to update on that some other time. 🙂

Simple Ground Turkey and Pepper Saute

In an effort to make dinner using only lean proteins and vegetables I created this little gem.

Don’t judge a thrown together recipe by it’s photos.  It really was good!   Good enough that I made a second batch a few nights later!

Again, sincere apologies for the less than appetizing photos, but if you are looking fora high protein, minimal carb dinner option, this is a definite YES in your recipe book.

 

Ingredients:

Ground Turkey (Italian Style if possible)

2-3 peppers (sliced)

Half red onion (chopped)

Mushrooms

Can of diced tomatoes

Can of diced green chiles

Worcestershire Sauce

 

Brown the turkey, add the veggies, season with Worcestershire sauce and a little pepper, cook until veggies are tender.

Half Marathon Training Recap: Weekend Warrior Style

Still only running on the weekends.  At this point it’s a test.  A test to see how much my time changes in comparison to my first half marathon when I trained 3-4 days a week last year.

Two weekends ago I did an 8 miler.  And it sucked.  Did you read about it —–> 8 Miles of Suck

 

Last weekend: Another 8 Miler.  It was an easy, smooth, not too windy, pleasant as running 8 miles can be, run.

And, so, yesterday I set out for 9 miles.

I plan out my run so I am going INTO the wind the first leg which should mean that it’s at my back on my return.

One would think, anyway.

But I SWEAR to you, the wind changes.

Every. Dang. Time.  

What do you WANT from me, wind?  Give it up.

Ya, those flags are standing straight out.   Welcome to my day.

 

Instead of staying on the Big Papio Trail, I crossed over and did a portion on the Keystone Trail as well.

This was a ridiculously tough run due to the wind.  Nearly 30 seconds added to each mile compared to last weeks.  OUCH!

But, what doesn’t kill you makes ya stronger, right?

 

Sure.

Something like that.

Joke’s on You

We had a little fun at work today playing up the April Fools Day Pranks… work appropriate of course.

 

Scene 1: The break room refrigerator within our Department.

The word on the street is a few coworkers fell for it.  One even quickly took ice out of the freezer but questioned why the lights were still working.

 

Scene 2: The copier

One employee was overheard stating how silly it was that the institution was spending money on making the copiers voice activated when we could be spending money elsewhere.

Word is another employee actually fell for it.

 

Scene 3: An email was sent out to our department to enjoy the brownies in the break room. They were in for a surprise when they lifted the foil.

Scene 4: The printer in the middle of the hallway.

This little number is outside my office door, so I had the luxury of hearing the laughs, watching the double takes and the smiles that inevitably crept up on their faces.

I may or may not be a part of a little group that is working on boosting morale, bringing happiness and providing a little fun to our daily life within our department.

 

And I may or may not have played a little part in these light-hearted pranks.
