Mediterranean Frittata Recipe

This Mediterranean Frittata recipe was inspired by Move Nourish Believe.  I discovered the recipe a few days ago, made a few tweaks and have now consumed multiple servings for two days.  Can’t wait to eat a slice for breakfast tomorrow.

Yep!  It’s THAT good.

Photo’s don’t do it justice.  Especially since I chose the lazy route and took them with my iPhone instead of my DSLR.

Mediterranean Frittata

Step 1.  Chop spinach, onion and olives.  Mix together in a large bowl with the egg whites, seasoning and as much Feta Cheese as you prefer.

Step 2.  Pour into a round cake pan.  I lined my pan with wax paper, but I found this step to be unnecessary.

Step 3.  Bake at 325 covered for 25 minutes.  Uncover and continue baking until egg has set.

Step 4.  Cool, Cut, Eat.

Raspberry Bar Recipe- Healthier!

Inspired by the recipe found on Move Nourish Believe, I give to you the sweetest raspberry treat that won’t break the calorie bank.

Raspberry Bars

A cookie bar type base (made with healthier alternatives), topped with raspberry preserves with crumbles of cookie bar dough to round it out.

So very good.

Sweet enough to satisfy that raging sweet tooth, healthy enough to not send you over the calorie clif.  Win!

Step 1: Mix together wet ingredients until combined.  Add dry ingredients (minus the oatmeal), blending until fully combined.  Stir in oats and spread into a 9×13 cake pan.

Step 2: Spread raspberry preserves over the top of the cookie base in an even layer.

  I used a full jar of sugar free preserves and half a jar of regular.

Step 3: Add to a 350 oven and bake for 25-30 minutes.  Let cool completely before cutting into bars.  Enjoy!

MNB February Challenge Week 1 Recap

Hey, Hey!  We made it through another Monday!  For me, this was a Gigantic accomplishment considering I spent the weekend in Vegas for a 40th Birthday Party.  Loads of fun!  I deserve a high-five for making it through today after that kind of weekend!

I chose the Summer Series Travel Workout and had a hard time taking a post-workout selfie.  But I did it.  I usually make fun of selfies.  Not the selfie with your friend kind.  The kind where people take pics of themselves all the time and post them kind.  #truth

Day Three: February 5, 2014

 Challenge Topic: Let’s Get Planking! Plank for at least five minutes today!  You can split the planks up.

After I taught TurboKick, I invited a few to stick around afterwards and plank it out with me.  It made the 5 minutes FLY by as we laughed and supported each other by saying things like: “Don’t sink your butt.”  or the opposite “Don’t stick your butt up.”

Oh, the things you can say and get away with during workouts.

 Challenge Topic: Buddy Up!  Workout with a friend today!

My girl, Tyree, stopped over on Thursday night to help me run an errand.  I love that she is a trooper and threw in a few workout moves with me.  We chose oblique twists with a medicine ball and plank taps.  Go Team!

5. Jason’s Deli Turkey Reuben

I simply love Jason’s Deli.  Fresh, natural, wholesome food.   I had a late night last night and didn’t get home until after 8pm.  Luckily Jason’s Deli was on my way home so I swung in and got the Turkey Reuben for the Mrs. and a Muffaletta for the Mr.
