Raspberry Cream Cheese Coffee Cake

I made this dessert earlier this summer and OHMYGOSH you guys.  It was insane.

Or… so I was told.  I made it for a work meeting.  All I know is it was licked clean within an hour time span.

Thanks to Vera over at Oh My Goodness Chocolate Desserts for the easy to follow instructions and recipe.  Springforms and I have a history of disasters, but this little raspberry crumble number redeemed our friendship.

PS. You should click on her link above for legitimate photos of the dessert.  Much more pleasing then my kitchen lighting + iPhone snaps.  Lazy at best when capturing food shots.  Whatevs.

Raspberry Cream Cheese Coffee Cake

  • 1/4 cup sugar
  • 8 oz. cream cheese-softened
  • 1 egg white
  • 1 cup raspberries-washed and well drained
  • 1 and 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 5.5 Tablespoons unsalted butter- softened
  • 1/2 cup sugar
  • 1 egg + 1 egg yolk
  • 3/4 cup sour cream
  • 1 teaspoon vanilla extract
  • 1/3 cup sugar
  • 1/2 cup flour
  • 3 tablespoons butter-chilled and cubed
  1. Preheat oven to 350F. Grease 8 or 9 inch springform pan and line the bottom with parchment paper. Set aside.
  2. Filling instructions: Mix the cream cheese and sugar together on medium-low speed until creamy. Add egg white and mix on low until combined. Set aside.
  3. Cake batter instructions: Stir together flour, baking powder, baking soda and salt in a bowl, set aside.
  4. With an electric mixer cream together the butter and sugar on medium-low speed. Add egg, egg yolk and vanilla. Slowly mix in the flour mixture alternating with the sour cream. Transfer the batter into the prepared pan and smooth with a spatula. Spread the cream cheese filling on top. Place raspberries on top of cream cheese filling.
  5. Topping instructions: Combine sugar, flour and chilled cubed butter in a bowl. Stir with a fork or pastry blender until the mixture is crumbly and sprinkle on top of raspberries.
  6. Bake for 40-45 minutes until a cake tester inserted in the center comes out clean. Cool on a rack, run a thin knife around the cake and loose ring of springform pan.
  7. Store in the fridge.

We Grow As One

I am super excited to share with you a series of posts covering some of my favorite local Omaha Metro businesses as part of the #WeGrowAsOne campaign.  Growing our economy starts with supporting our own local businesses and Omaha has quite a lot to be proud of!

Having lived in Omaha for 11 years, I find myself more and more attracted to the small, self-supported and locally grown operations and businesses.   It’s no small task to build a business.  I have seen the highs and lows that it involves having married an entrepreneur myself.

On this journey, I will be posting highlights of a few of my favorite local businesses.  I hope that at the end of this series you have grown in knowledge on the incredible entrepreneurs we have in the city of Omaha and find yourself visiting them, using their products, or at the very least seeking out local businesses in your area.

Cheers to this next adventure!

First National Bank of Omaha is sponsoring this post, but all thoughts are mine.

Algona Freedom Rally | 2017

We came.

We saw.

We conquered.

ABATE of Iowa, Algona Freedom Rally 2017 was another success.

And by success we mean drunk, tired and wet.

Oh come on you dirty minded folks… it rained.  Daily.  Hell, we even survived a potential twister in the area.  Tent campers unite!

But you dirty minded folks probably aren’t too far off either. 😉

Like all motorcycle rallies; we arrived, checked-in, set up camp and immediately headed back into town for necessities:

  • Beer
  • Snacks
  • Beer
  • Liquor

before settling into some campsite day drinking, games and people watching.

Holding up to last years promise, Tracy scored a yard game to keep us entertained for a few hours each day.   Let’s just say a few of us were big talkers and our mouths perhaps got a little ahead of our game.

Why yes, yes that is a giant bottle of Sangria he’s holding.  We hang with manly men.  Don’t judge.  It’s a rally, remember?  In his defense, he also enjoys partaking in drinking the cheapest, most gut rot inducing beer he can find.

Our crew prefers to camp on our own little acreage, nestled back in the trees, away from the Algona Rally hub.   We were pretty stoked when we scored our spot we stumbled upon last year and are pretty confident that two years in a row makes us official owners of said acreage.  Watch it 2018’ers.  We are coming for you if you take our spot.

But, if you prefer to be where the action is day in and day out, then go camp with our good friends the Wiese’s and their mighty crew.

Where might that be, you ask?  Just follow the loud rukkus coming out of this beautiful Coleman turned DJ central, aka Andy’s masterpiece.

*shirtless stud sold seperately

Or just look out for a sea of tent canopies on the main drag.  You’ll see them if you don’t hear them first.

Rain delays on Thursday didn’t dampen our spirits thanks to the Larson’s bonnet.  Who said anything about this contraption being made for a sunblock on the beach?  Psssh….. rain block at rallies is more like it.

Heck, if that doesn’t work, just throw a chair carrier over your head and call it a day.

SHUT the front door…. is that a SODA and not a beer?   Yes, sometimes a beer break, literally, is needed and welcomed.

Many folks ask how large of a crowd the Algona Freedom rally brings in.   Allow me to let the photos tell the story.

Pretty impressive, ya?

One popular activity during the rally are the motorcycle games.   From the hotdog eating contest, to the slow ride, to the keg rolling, you are bound to see some skills.   In what skill area are we referencing specifically?  I’ll leave that for you to experience when you attend the Rally in 2018.

Pictured above are our new friends Shelby and Brandon.   Liz and I have followed Shelby (and she us) for a few years on Instagram.  Funny how those hashtags actually work, you hashtagging fools.  When used with purpose and intention, you actually stumble upon some pretty cool shit, including people!   It was awesome to finally meet and hang out at the Rally this year!

I am positive that this is just the start of a pretty great friendship and will bring about some fun rides in the future.   Way to go, Instagram!

I used the rally games to actually start messing around with my DSLR settings and photoshop.  I am hellbent on figuring this out so I can try my hand at capturing some good shots of my girls on their bikes. 🙂

The photo above is my first time throwing in a sky overlay.   For my first time, I’d say I didn’t do too shabby blending it in.   Keep your judgy mcjudgerson thoughts to yourself photo police.   Perhaps lend some soft suggestions on how to use and abuse that fancy photoshop element tool, eh?

The community of Algona held some dirt track racing on Saturday, so we made our way off grounds to partake in that little afternoon adventure.  It was decent but not thrilling.  I believe we all came for the action but stayed for the announcer.   Someone get that guy a gig announcing all the nonsense seen at the actual rally, stat.   Entertainment for hours.

Algona 2017 went off without a hitch if you ask our little crew.  But, we don’t ask for much.  Steak sandwiches for the hubs, well done burgers for yours truly, prime real estate for camping,  good tunes and train wreck sight seeing galore.  I believe we checked off all those boxes.

Even though a repeat from years prior, this guy never disappoints with his flame throwing techniques.

But T-Rex was a new and hilarious edition this year.

Ominous skies made for the most beautiful weather we’ve had to date!

And evening tunes brought out the crazy.

Heck, even a few mid-afternoon naps were welcomed by some, alcohol induced or not, the balancing act is impressive.

BUT, word of caution, if you fall asleep while watching the afternoon parade of people, you are bound to wakeup to a bearded hug and a moonshine bottle in your face and down your throat.   Happy rallying, Heidi.

In the end, great friends make the event a success.

Thanks to ABATE of Iowa for yet another kick ass weekend of fun and sun.

Algona 2017, you certainly did not disappoint.  We look forward to your next adventures in 2018.

Special Thanks:

10th Annual B!tch Run | July 25th, 2015

↓ Girls, Girls, Girls

What a day …

with all these girls

And to think that it all started from these two minds.

So, how on earth do I even begin wrapping up an entire days worth of photos into one post?   This is the main reason why it has taken me darn near two months to even start this entry.  Do I make multiple posts?  Do I make one giant one?  And what photos of the over 450 do I share with you fine people?

You feeling my dilemma here?

And so, it was decided.   This giantnoteworthy, epic day is going to be wrapped up into one GIANT, beautiful, powerful, kick-ass post featuring some equally beautiful, powerful, kick-ass women.

Here we go…

The Hard Luck Saloon | Council Bluffs, IA

The Hard Luck served as our meetup point.  The start of Bloody Mary’s, shirt exchanges and pre-run group photos.  Because rain, of course.

11:45am | Kickstands up.  Time to start the day.

Nothing hotter than THAT view right there.

Hey ladies. ❤

The Wild’s | Bartlett, IA

Where the drinks were cold, conversations started flowing, people loosened up and epic gift giving was had.

Now, why on earth they wanted to pick up my ass is beyond me.  I think Jenn just wanted to get a little frisky.

But it served as the perfect opportunity for the girls to give me the most thoughtful, hilarious, absolutely PERFECT gift of all time.  Sneaky little sisters, I tell ya!

I’m just going to allow the photos to do the talking from here on out.

Brace yourselves for this awesomeness.

Oh, NO you DIDN’T!

Oh, YES you DID!

B!tches Betta Recognize!

The Story.   Around the 4th of July I found a photo of this jacket on the good ol’ Internet and posted it on my Harleys & Heels page reminiscing about my Junior High years when I actually DID have this exact jacket.  Fringe and all.   Who knew that a few of these girls (I believe Tracy was the mastermind in getting this all going – LOVE you, doll) would pull off searching, finding, buying and organizing a group card.

Best, sistas, EVER.

And with that… we moved on.

Kayla, Sara and Jess were the Jeep crew.

Fortunately, soon after this photo, they were able to take the Freedom Panels out!  It wouldn’t be a B run without a little rain! 🙂

And more…

Riverton was a short and sweet stop.  Enough for a couple cocktails and a little ruckus before leaving this quaint little town.  What kind of ruckus you ask?  Click here.

On to Shenandoah, IA where we caused a mild curiosity amongst the local PD.  I think we counted three drive-by’s?  I promise, we were on our best behavior.

All those women on two wheels?

Ya, I’d do a few drive-by’s myself!
